What it's for
Relief carving, lettering, shaping chair seats and spoons. Carving gouges are sold by sweep (how curved the edge is) and width, and a handful of sweeps covers most work, so build a set slowly around what you actually carve. Old London and Sheffield carving tools turn up loose and in sets, and many still have plenty of steel. A firmer chisel and a spokeshave fill in the flat and curved surfaces between the carved parts.
